Ricotta Filling (for Ravioli)

Ingredients

l bs. ricotta cheese
1 c. grated Picorino cheese or Romano
3 eggs
Salt & pepper to taste
2 tbsp. parsley flakes or fresh parsley

Preparation

Mix ingredients together and set in refrigerator to set. Form into small balls and place on dough.
